Roasted Chestnuts

Chestnuts are hard to work with and there's no denying that burned fingers are pretty much an expectation. However, this doesn't have to be the case! Want to know the secret to perfect roasted chestnuts every time, guaranteed? I knew you did!
First, preheat that oven to 425 degrees! You'll want to move quickly while doing this, so there's no second to spare!
Second, score an X in the rounded side of each nut. Like so:

Then, soak the chestnuts in hot water for 1 minute.
Pat dry.
Season (for this set of directions, we're just roasting)
Place all the nuts in a single layer on the bottom of a generous amount of aluminum foil.
Tent the foil like a package, making sure to leave a hole at the top. Like so:

Place in oven for 25 - 30 minutes. You'll know they are done when the skins flower back and you can see the delicate meaty inside is a golden colour.
Take them out, and immediately take the skins off. Well, wait until you can handle them for this step. Burning fingers is not fun.
