Strawberry-Eggnog French Toast Casserole

Ingredients
1 Cup Strawberry Preserves
3 Udi's French Bread Baguette, cut into cubes
1 8oz package of Neufchatel Cheese
4 Large Eggs
2 Cups Eggnog
1 Teaspoon Ground Cinnamon
1 Teaspoon Vanilla Extract
1/4 Cup Light Brown Sugar
Instructions
Lightly butter a 13X9 baking dish
Microwave strawberry preserves until fluid enough to drizzle- set aside
Spread half the bread cubes in a single layer on the bottom of the prepared pan
Evenly distribute Neufchatel Cheese cubes over the bread
Drizzle warmed preserves evenly over the Neufchatel
Distribute remaining bread over the the top
Whisk together eggs, eggnog, cinnamon, and vanilla. Pour evenly over casserole
Sprinkle brown sugar on top of the casserole evenly
Seal tightly with plastic wrap and refrigerate overnight or up to 24 hours
Preheat oven to 425 degrees
Remove casserole from refrigerator and cover with foil
Bake for 20 minutes. Remove the foil and back uncovered for 10 minutes. If the bread is browning, replace foil loosely and continue baking for 5 more minutes, otherwise bake uncovered
Remove from oven and allow to cool for a few minutes before serving
